The Goodmans scaled up as the demand for packaged lettuce boomed, and they later industrialized and partnered with companies like Costco and Wal-Mart to sell pre-washed and packaged lettuce on an intricate and highly unsustainable industrial farm that is nevertheless still technically “organic.”
